Bamboo Rice is great as a side dish to fish, chicken, pork or whenever a striking note of color is desired to brighten up the meal. Its sticky, but fluffy texture is perfect to add exotic, flair to sushi rolls, risotto and rice desserts. Combine shrimp, bamboo shoots, vegetables, coconut milk and ginger, for an Asian style stir-fry or easily turn this rice into a curry dish. Bamboo rice provides a unique visual contrast to the pink color of salmon, or the golden brown color of pork chops.
In a saucepan, bring 1 cup of rice and 2 cups of water to a boil. Lower heat, cover with tight fitting lid and simmer for 20 minutes. Let stand 5 minutes. 1 cup dry yields 2 cups cooked.
