RECIPE: ADD ENTIRE CONTENTS OF PACKAGE TO 5 LBS OF WELL TRIMMED BEEF (OR VENISON, OR ELK) CUT INTO 1/8" - 1/4" SLICES. THOROUGHLY MIX MEAT WITH SPICES. REFRIGERATE OVERNIGHT (8 HOURS) PLACE SLICED AND SEASONED MEAT ON BAKING RACKS OVER A SHEET PAN. USE SMOKER FOR BEST RESULTS AND SMOKE FOR 6 - 10 HOURS AT LOWEST HEAT SETTING (150* - 175*). OPTIONAL: USE SAME PROCESS IN OVEN ON LOWEST HEAT SETTING (150* - 175*) WITH DOOR CRACKED OPEN COOK FOR 6 - 10 HOURS.
