Sweet Puff Pastry Croissants

  • .5 oz ground shelled almonds
  • 2 teaspoons sugar
  • 1 egg yolk
  • 2 teaspoons cream
  • 2 sheets puff pastry
  • 1 jar Bonne Maman Raspberry Preserves
  • To finish: Egg yolk, 1 teaspoon cream
  1. Stir together the almonds, sugar, egg yolk and cream to make a thick paste.
  2. Thaw frozen pastry sheets at room temperature for 20 to 30 minutes before gently unfolding onto a lightly floured surface. Cur each sheet into 8 triangles
  3. On the broader end of each triangle place some of the almond mixture and one teaspoon of preserves. Roll up into croissants and turn the ends inwards. Place on a baking tray lined with baking paper.
  4. Stir together egg yolk and cream and brush the croissants with the mixture. Place in an oven pre-heated to 425 degrees, on the middle shelf, for 12-15 minutes. Serve warm or cool.
