Gold Hill was created by our cheesemaker, Jackie Chang, and named for one of the original gold strikes in north-central Colorado. It is a Spanish/Portuguese style cheese similar to its big brother, our Queso de Mano, but made with pasteurized goat milk and additional cultures to bring out a balanced buttery and tangy aroma. This firm natural rind is aged for six to twelve months, which allows it to develop its nutty, earthy notes. Gold Hill not only took home a Super Gold at the 2017-18 World Cheese Awards in London, England but also won the award for the Best American Cheese.
Arethusa Diva has a smooth, supple paste and a tacky, burnt orange rind that straddles the line between milky sweetness and all-out stink. With a sweet, tangy flavor and a nutty, lightly pungent aroma, this Diva is assertive, but never aggressive. ACS 2016 Winner!
Brie has been made in Canada since the French colonization. This classic, tastebud-seducing cheese is always the first to disappear from the cheese plate. Perfected over the years, this Brie easily stands up against its transatlantic cousin.
Type: Soft Ripened
Made from fresh, local milk gathered only a few hours after milking, BelGioioso Fresh Mozzarella begins with quality ingredients and care. The result is a delicate, clean-flavored Fresh Mozzarella with a soft, porcelain white appearance – the finest available on the market today.
This raw, (mostly) Jersey cow milk blue has no buttermilk in it; however, the dominant lactic flavor of this cheese may remind you of that rich, tangy dairy product. As assertive blue, it is tongue-shockingly good, with a texture perfect for the table, or for crumbling over a salad or melting on a burger. Made in Wisconsin by Roth Kase.
