Gold Hill was created by our cheesemaker, Jackie Chang, and named for one of the original gold strikes in north-central Colorado. It is a Spanish/Portuguese style cheese similar to its big brother, our Queso de Mano, but made with pasteurized goat milk and additional cultures to bring out a balanced buttery and tangy aroma. This firm natural rind is aged for six to twelve months, which allows it to develop its nutty, earthy notes. Gold Hill not only took home a Super Gold at the 2017-18 World Cheese Awards in London, England but also won the award for the Best American Cheese.
Our signature offering, Humboldt Fog is an elegant, soft, surface ripened cheese. The texture is creamy and luscious with a subtle tangy flavor. Each handcrafted wheel features a ribbon of edible vegetable ash along its center and a coating of ash under its exterior to give it a distinctive, cake-like appearance. An American Original!
