Alaea salt, or Hawaiian red salt, is an unrefined sea salt blended with iron-oxide rich volcanic clay called ʻalaea’. This clay is what provides it’s signature terracotta colour. Native Hawaiian cuisine enjoys regular use of Alaea. It is also used for ceremonial practices such as cleansing, purification, and blessings. Among its many uses, it is exported to the Pacific Northwest as a curing aid for salmon.

The first marshes of the island of Re’ would have been created in the 12th and 13th century at the instigation of St. Michael Religious. The Ile de Ré is located on the Atlantic coast opposite La Rochelle to which it is connected by a bridge 3 km. With an exceptional climate, it enjoys a microclimate all year. Since 1986, our determination is total to safeguard the salt marshes of the island of Ré.
