LAMBRUSCO WINE JELLY
Paola Calciolari began her career as a pharmacist but her true passion was food. She took a gamble, leaving her secure job in order to produce typical condiments from Mantova (Emilia Romagna), often employing her grandmother’s recipes. And we’re glad she did. She makes her exceptional mostardas and jellies by sourcing locally harvested fruit, and slicing and cooking them in their juices; it is a highly labor intensive process. They are extraordinarily fresh, flavorful and chunky. Though often paired with cheese, they also work well with roasted meats and charcuterie.

PASTRY 1, CANDIED LEMON PEEL 1/4
Lemon peel slowly candied in sugar syrup. The candying process replaces the water naturally held within a fruit with sugar syrup. The process requires close observation, changes in density of the sugar syrup, and many hours. The result is a preserved fruit with great flavor, a lustrous shine, and a chewy texture. Cut into strips. Average length: 5.5 cm. Average width: .5 cm.

PASTRY 1, WHITE CHOCOLATE MOUSSE
Powdered cold process mousse mix. Powdered soluble fresh cream stabilizer for the production of freeze-and cut-stable fresh cream tortes and fillings. Adding more liquid will result in a less stable finished product. Do not overwhip the heavy cream. Fold carefully into the fond. Refrigerate finished product for at least three hours.

Pureed smooth with all seeds extracted, a hint of sugar is added to balance the natural tartness of the berry. A small amount of fruit pectin is added to further refine the puree’s texture for pastry recipes, artisan cocktails, and mixed drinks. Handling: Keep frozen. Product good for 7-10 days thawed and refrigerated at 40° F, and up to 24 months frozen from manufactured date.
