O-Med vinegars are characterized by a soft acidity. The production method lets the alcohol be transformed into acid while the other aromatic compounds are preserved in the vinegar. The goal is to be able to taste the essence of the fruit without being overwhelmed by acid. Great for marinating fish, pickles, fish Carpaccio, vegetables and salads.
O-Med Jerez vinegar is made from the selection of the best wines in Jerez. After aging in American oak barrels we obtain a vinegar distinct in color, taste and aroma. Ideal for dressings, salads and marinades.
Coconut vinegar, made from fermented coconut water, is used extensively in Southeast Asian cuisine (particularly in the Philippines, a major producer, where it is called suka ng niyog), as well as in some cuisines of India.
