Industrialist Clément Faugier invented chestnut spread, or cremes de marron, in 1885. Marron glaces were at the time a beloved but delicate confection, susceptible to damage, and therefore, Fauglier sought way to repurpose broken Marron Glaces he was unable to sell. He wanted to avoid having to dispose of the expensive product. Sweetened chestnut puree was thinned and flavored with a syrup of water, sugar, vanilla and small bits of candied chestnuts, and crème de marrons was born! Use in confections or as a complement to savory courses of poultry, pork or beef.

Crisp, tart pickles made from tiny gherkin cucumbers. The gherkin is a fruit similar in form and nutritional value to a cucumber. Gherkins and cucumbers belong to the same species but are different cultivar groups. They are usually picked when 4 to 8 cm in length and pickled in jars or cans with vinegar (often flavored with herbs, particularly dill; hence, dill pickle) or brine to resemble a pickled cucumber. The term can also be used to refer to the West Indian Burr Gherkin (Cucumis anguria), a related species, originally from West Africa and introduced to the West Indies, probably by the Portuguese. It is edible and may be pickled, but must be picked when no longer than 4 cm long, since it becomes bitter and spiny if allowed to grow larger.
These medium sized capers are hand selected from caper bushes grown in the Mediterranean. Once the capers are picked they are salt packed in jars. Because they are packed in salt and not brine they have a bright vibrant true flavor. To use this item rinse thoroughly and mix into sauces and pesto.
