Los Villares sherry vinegar is made from fine Spanish sherries. The classic sherry flavor is from the Palomino grape. Aged in oak barrels in cool aging cellars, this vinegar adds the nutty, rich flavor of sherry to all recipes.
Made of fresh Trentino apples that are reduced and acidified in the same manner of a fine balsamic, Balsa Mela is produced by Acetaia San Giacomo, a young, family-owned company that makes exquisite aged Tradizionale vinegars. A sweet, fruity vinegar with a soft acidity.
Ingredients: cooked apple juice and apple vinegar
Palamino grapes. Tastes of sun ripened raisins. Aged in American oak barrels for 5 years.
It’s the perfect ingredient for savory dishes and salads with cheese. Think asparagus, leeks, mushrooms and ripe tomatoes with blue cheese or chevre. Don´t miss oysters dressed with this vinegar.
Cane vinegar, made from sugar cane juice, is most popular in the Philipines, in particular, the Ilocos Region of the northern Philippines (where it is called sukang iloko), although it also is produced in France and the United States. It ranges from dark yellow to golden brown in color and has a mellow flavor, similar in some respects, to rice vinegar, though with a somewhat fresher taste. Contrary to expectation, containing no residual sugar, it is not sweeter than other vinegars.
Tasting Notes: O-Med Pedro Ximénez tastes of sun-ripened raisins. After a careful aging process in American oak casks, we obtain a perfectly balanced vinegar with subtle sweetness. Recommendations: Drizzle on ice cream or try in place of balsamic.
