These small, domed-shaped cookies that are crisp and crunchy on the outside and soft inside, originated in Venice Italy during the Renaissance period. Classic Soft Amaretti is a delicate and chewy cookie, sometimes referred to as an Italian macaroon. It is completely flourless as it is made of blanched almonds, egg whites, sugar and almond extract.
