Los Villares sherry vinegar is made from fine Spanish sherries. The classic sherry flavor is from the Palomino grape. Aged in oak barrels in cool aging cellars, this vinegar adds the nutty, rich flavor of sherry to all recipes.
Pedro Ximnez Dry and Sweet Vinegars from Spain are a step above ordinary Sherry vinegar. It all begins with Alvear’s award-winning dry and sweet wines of Montilla. These are made exclusively with the Pedro Ximnez grape, giving the wine”and thus the vinegars”tremendous depth of flavor. Then, the special flor (yeast) of the Alvear cellars plus careful solera barrel aging turn the wine into elegant, versatile sweet and dry vinegars. This is 100% Pedro Ximnez wine vinegar! It has been aged for 10 years using the exacting solera process. Special care in both winemaking and barrel aging makes for quality and flavor unlike any other Sherry vinegar.
For the oil we use the peel, and with the rest of the fruit we produce the vinegar. It is a French-style vinegar where we mix the fruit with a chardonnay wine vinegar. The method of production is purposeful and a very delicate filtration is used.
Tasting Notes: O-Med Pedro Ximénez tastes of sun-ripened raisins. After a careful aging process in American oak casks, we obtain a perfectly balanced vinegar with subtle sweetness. Recommendations: Drizzle on ice cream or try in place of balsamic.
