San Marzano tomatoes, a variety of plum tomatoes, are considered by many chefs to be the best paste tomatoes in the world. Compared to the Roma tomato, San Marzano tomatoes are thinner and more pointed. The flesh is much thicker with fewer seeds, and the taste is stronger, sweeter and less acidic. Many people describe the taste as bittersweet.

This famous sauce is produced in Italy only once a year during the peak of the tomato season in August. Pomodorina is made within two hours of the tomatoes picked.
