Now we`re talkin`! Beemster Classic (aged 18-months) is considered the classic Dutch cheese throughout Holland. Its complex flavors develop slowly as it matures for a year and a half in our 100+ year-old traditional warehouse. A firm texture with some crystallization, a deep ochre interior, notes of toasted walnuts, and a brown-butter finish equal perfection!
Parrano is made as a modified Gouda recipe that has been changed to incorporate elements of Italian style cheesemaking. The resulting flavor and texture forms a mid ground between gouda and parmesan. Parrano has enough flavor to be appealing to a connoisseur, yet simple enough for a beginner; a real crowd pleaser.
Renowned Danish creamery St. Clemens may be best known for their blue cheese. Yearning to emulate the French favorite Roquefort, the cheese holds a rich history on the island of Bornholm, east of Denmark, famous for its rich green pastures and picturesque shorelines. Made with pure cow’s milk, this creamy blue is streaked with blueish-green veins within a pale ivory-colored paste. The slightly moist, edible rind has a certain pungency which plays off the earthy tones of the cheese, which is now packaged in a three-pack of this famous cheese. St. Clemens is the only producer in the world to be named two-time World Cheese Champion: in 1980 and 1998.
Smoked Maasdam features a mild, nutty flavor and a subtle smokiness. With a delicious, edible rind, the cheese is smoked over smoldering hickory chips, creating and earthy flavor profile with hints of dark Belgian beer. The pale yellow paste and smooth texture complete this cheese, which will lend a touch of warmth to any dish or cheese platter.
Jarlsberg is a semi-soft part skim milk cheese. The flavor is sweeter and less nutty than Emmental, with a buttery and rich texture. An all purpose cheese, Jarslberg is good for both cooking and snacking.
The story of this extraordinary cheese began many years ago when a Dutch master cheesemaker named Pieter got lost deep in the Italian countryside. Chance brought Pieter to the home of Guiseppe Paradiso, a gracious old man who put Pieter up for the night and sent him off the next morning with homemade bread and cheese. So delightful was the cheese’s taste: smooth, buttery and popping with a refined crunch and a bold tang, that upon returning to Holland, Pieter couldn’t stop thinking about it. Pieter retuned to Italy a few years later to find out Mr. Paradiso’s cheese making secrets, but the old man had passed on. Determined to replicate the Italian flavor he loved so well, Pieter dedicated his life to perfecting his recipe. Once achieved he named his masterwork: Paradiso. Today Paradiso still holds the heart of two countries. It is made in the Italian specialty style by Dutch artisan cheesemakers using sweet, creamy milk from free-ranging cows that graze Holland’s nutrient-rich grasslands. All natural, gluten and lactose free, Paradiso is semi-firm and has a smooth, creamy texture with some characteristic crystallization throughout.
