ALTA LANGA, LA TUR
Made of cow milk, sheep milk, goat milk, ferments, salt, rennet. Cylinder shaped, lightstraw yellow colour, edible soft and wrinkled rind, weight about 230 g (8 oz).A soft and very light texture held by a cramy rind features this cheese. Obtained by a long maturation of three milks, the curd is gently processed by hand. La Tur has a great sweetness with cream and butter sensations, followed by acidic notes and yeast flavours.Tasting suggestions: at room temperature.

RICOTTA SALATA, IMPORTED
Ricotta Salata is a dried, salty, aged sheep`s milk cheese from Sicily. Ricotta means re-cooked and Salata means salted. It is sometimes called Ricotta secca, or Ricotta Pecorino. The cheese is made from the whey part of the sheep milk and is very white.
Ricotta Salata is made from fresh ricotta that has been pressed, salted and aged for at least 90 days, the result is a firm cheese, ideal for grating and often used in salads or pasta dishes. -
SIRBONE TRUFFLE PECORINO MOLITERNO
Unlike most truffled cheeses, the truffle shavings for this cheese are not added until the cheese is already semi-aged. This allows the cheese to develop its own character before the truffles are injected. Though the truffles are only visible in the veins their flavor permeates the entire pate. From Sardegna, this cheese is made from 100% raw sheep milk.

SERGIO MORO, UBRIACO AL PROSECCO
This cow’s milk cheese from Veneto is bathed in Prosecco and aged for a minimum of 6 months. The creamy yet crystalline paste develops delicate floral aromas and hints of pear and golden apple. It is a perfect marriage of texture and flavor and a part of Sergio Moro’s group of celebrated Ubriaco cheeses. Sergio obtained special permission from the DOP to use Prosecco in the name of his cheese, an honor they don’t bestow upon just anyone.

GORGONZOLA, ITALIAN MOUNTAIN
No cheese case would be complete without Gorgonzola, Italy’s contribution to the big blues of the world. This piccante version, called Mountain Gorgonzola, is a “natural” type of cheese, and matures for 90 days. With its buttery consistency and fervent blue veining, it straddles the line between creamy and crumbly, making it suitable for the table as well as sauces and salads.

Robiola Bosina is a bloomy rind, square shaped Italian cheese that is made from a blend of sheep and cows milk. Produced by the Caseificio dell`Alta Langa dairy in Piedmont, this cheese has a creamy, elastic and supple pate with a rind that is velvety and pillowy. Its appearance has a straw colored pate and a bright white rind. The cheese has full rich flavors that are earthy and mushroomy with undertones of sweetness and tanginess attributed to the sheep milk

LATTERIA SORESINA, GRANA PADANO
These are very specially selected wheels of the very finest Grana Padano, which then are carefully extra aged for a minimum of 22 to 24 months. The result is an extraordinary cheese that is very fragrant and intense while still retaining its special delicate, fruity and light characteristics. Each cheese is one of a kind, labeled with the unmistakable seal ORO DEL TEMPO with the serial number of the dairy, the place of origin, the month of production and the number assigned to the product, all which guarantees the utmost quality of the product.

PECORINO CAMOMILLA (CHAMOMILE)
Camomilla is produced in May and June, when the sheep graze on the best grass of the year and the fields are covered with chamomile flowers. Paolo was again inspired by memories of his grandma, who would put the cheese in large wooden crates covered with fresh cut chamomile to preserve it as it aged. The wheels were stored closed up under the arches during the afternoon heat and then placed in a cool pantry in the evening. The process maintained the cheese’s softness, as well the floral aroma. Paolo has spent the last several years dedicated to recreating this one of a kind cheese that has hints of herbal sweetness and fresh cut apples.

ARRIGONI, DOLCELATTE GORGONZOLA
A soft, blue cheese made with uncooked cow’s whole milk . Its name is that of a small town in Lombardy near Milan, where it is said to have been born in the twelfth century in order to retrieve a forgotten curd of the day before. Gorgonzola Dolce is a soft cheese, with a homogeneous distribution of its mainly blue coloured veins.

ITALIAN IMPORTED PROVOLONE
Provolone is a northern Italian cheese that can be thought of as Mozzarella`s older brother. Take some Mozzarella, form it into your favorite shape, and rub it down with brine, bind it with rope and hang it from the ceiling for a few months and Voila! – you have just made Provolone. There are two varieties of Provolone. Dolce (meaning sweet) is the mild version and Piccante (meaning sharp) is its spicy, more aged counterpart. We love this Piccante version, which is rarely available in the U.S .and much more interesting than the mild Provolone most Americans have come to know. One of the great sandwich cheeses, Provolone Piccante is also an excellent melting cheese that is perfect in omelettes or atop a toasted baguette.

FRATELLI PINNA, MEDRO PECORINO
A semi-cooked cheese with an intense aroma, flavorsome and a typical product of the Sardinian cheese-making tradition. The rind is smooth, dark-yellow in color, surface-treated with olive oil; the texture is compact, more or less firm depending on the length of maturation, and pale-yellow in color. The unique characteristics of this cheese were officially recognized in 1996, by the award of the “Protected Designation of Origin” label, which has helped safeguard production technique, protecting the original flavor and increasing its presence on the market.

LATTERIA SORESINA, PARMIGIANO REGGIANO
Only the finest wheels are heat-branded with the Parmigiano Reggiano trademark. Did you know that Parmigiano Reggiano is produced exclusively in the provinces of Parma, Reggio Emilia and Modena, in the Bologna area left of the river Reno and in the Mantua area to the right of the river Po? On these farms, cows are fed a controlled diet based on locally produced fodder, in full compliance with the regulations of the Protection Consortium, which forbids the use of silage fodder, fermented feeds and animal-origin meals.
