SILVA, SPANISH CHORIZO
Enhanced with old world tradition! This is one of the first sausages we produced. True to its roots, our Spanish Chorizo contains a quality blend of spices including Bay leafs and Oregano. We cure and marinate the meat for twenty-four hours before smoking it for over two hours to achieve the authentic taste of old world Spain. Like our Breakfast Pork Link, the Maple links are another essential for any morning meal. We’ve added pure maple syrup to our already tasty pork links to give this sausage a hint of sweetness.

TEMPESTA, COPPA PICCANTE
Copper or Capocollo is a cured whole muscle coming from a Berkshire pork collar (top of the shoulder). We make a mild version with black pepper & juniper berries or a Hot version rubbed with our imported chiles. Aged 4 months.

Air dried magret, made of the breasts of Moulard ducks raised humanely with no antibiotics or hormones.
We season our Duck Prosciutto with a variety of spices including Fabbri Cherries, warming spices, red wine and garlic.
This ready-to-eat prosciutto is perfect when sliced for a charcuterie or cheese board.
Sold by the piece (breast) weighing about 10-12 oz per breast.

SCHALLER & WEBER, NUSSCHINKEN HAM
Schaller & Weber Nusschinken is a smaller Westphalian Ham. It is made in the same style as the larger hams, but cut from the knuckle, or nuss. This muscle is much more heavily worked than an average ham, which gives it a darker meat look and richer flavor as a starting point. Once the Nusschinken is cured and smoked in the Westphalian style, what comes out is smaller ham with a dense flavor that is sure to be a treat at any meal.
