Our raw, ready-to-cook Porchetta comes seasoned, rolled, tied, and scored for easy cooking right out of the package. We season our Porchetta with Sea Salt, Fresh Rosemary, Garlic, Sweet Calabrian Pepper, and other complementing spices used traditionally with an “Arista” style roast.

After 12 weeks of free-range growing, our ducks are individually hand-fed 2 meals a day for 10 to 11 days. The feed is local-grown corn, without hormone or antibiotics allowing us to offer the tastiest and healthiest moulard duck products to high-end restaurants.
This short rib is produced from fresh aged USDA Graded boneless beef, hand-seasoned, oven-seared and braised in natural beef stock to perfection. Simply heat the short ribs and serve with the signature sauce of your choice. Excellent for small plates and combination entrées.
Duck foie gras morsels are ideal for searing and preparing original bite-size hors d’œuvres. They may also serve for the preparation of mousses, sauces and other recipes requiring raw foie gras as an ingredient.
