Porcini are a prized mushroom found in Umbria’s Apennine Mountains. Simply soak these dried porcini in a mixture of milk and warm water and use them to enrich your next risotto!
These dried ear-shaped cap is medium sized, dull in texture, and dark brown to black. The wavy lower surface has a contrasting powdery gray color. The stem is absent or rudimentary. It has no gills. It is a native of Asia and some Pacific Ocean islands in humid climates.

Dried porcini mushrooms are not only a great alternative when fresh porcinis are out of season, they’re a tremendously useful mushroom to have in your pantry.
