The Fra` Mani Roasted Turkey Galantine is made with turkeys sourced exclusively from the Diestel Turkey Ranch, located in the foothills of the Sierra Mountains. The birds are sustainably farmed and range grown with room to roam. They are never given antibiotics, growth enhancers, or animal by-products, and are fed a wholesome, all-vegetarian diet of corn and soybeans milled on the ranch. Fra` Mani Roasted Turkey Galantine is made using both light and savory dark meat, giving it an attractive mosaic face and a true, rich turkey flavor. Each slice gives a taste of the whole bird. It is slowly oven-roasted to retain juiciness, and seasoning is limited to salt and pepper. It is gluten-free and contains no added MSG, nitrates, or nitrites, except for those which occur naturally in sea salt and celery juice.

SCHALLER & WEBER, TEAWURST
Tracing its roots back to the Baltic region in the mid-1800s, this smoked and cured meat spread became wildly popular in Germany as a tea time snack. Thus, giving it the name Teawurst. The well marbled mix used by Schaller & Weber makes it incredibly smooth and extreme decadent, and our recipe adds a touch of paprika, which pairs with the spread’s smoky flavor for a distinct and delicious treat.
It’s ground incredibly fine, so it spreads easily on slices of French or rye bread. It’s great as a snack or makes an amazing appetizer to impress your guests.

Seasoned with black pepper. Authentic Italian Guanciale is a specialty from the Umbria and Lazio regions, characterized by its tenderness and very special flavor. TEMPESTA, CAPICOLA W/ RED PEPPER
Our Cooked Hot Capicola is made from the same cut as “Coppa”, and is first brined in a flavorful, aromatic liquid for a few days. From there we proportionally dry-rub hot Calabrian Peppers on the outside of the muscle, and then encase the muscle in a net for cooking. The Capicola is slow-roasted to keep it supple and juicy. A popular, must-have deli meat for any delicatessen.
